As many of our past guests are aware, the Royal Mail Cellar is one of the most treasured and awarded wine collections in the country.
Wine Director, Lok Thornton has the task of managing the more than 2,000 titles on the 70 page list and is one of the sommeliers always on hand to assist diners with their selection.
Lok says that "an important part of writing a wine list as comprehensive has ours is to define your goal and see to meeting these goals. At the Royal Mail we are very passionate about serving wine at the most appropriate age. Our extensive cellaring facilities allow us to ‘buy and hold' wine so that we are able to put all wines on the list only when they are ready to drink. It is interesting to note that our collection offers over 400 wines under $100 including 120 titles under $50. Most importantly though is that we have over 1,600 wines that are older than 2002 showcasing how serious we are about presenting wine at the right age."
Recently, a new series of food and wine matches have been introduced to the restaurant with the aim of making this fabulous collection even more accessible to guests.
Restaurant tasting menus are now offered with a series of three wine matching options: village, vintage and international. The 'village' option focuses on the best current release wines, featuring some of our favourite local producers such as Crawford River, Henty Estate and Bests. 'Vintage' gives diners the chance to sample some spectacular aged wines from the same local producers and 'international' takes full advantage of the exceptional depth and breadth of the Royal Mail Cellar presenting fantastic vintages from the best Australian producers, as well as some of the world's most renowned winegrowing regions, including Bordeaux and Burgundy.
The long weekend of June 6-8 will be an opportunity for guests to get a behind the scenes look at the Royal Mail Hotel Cellar as Wine Director, Lok Thornton conducts tours and tastings of current release and vintage local wines.
Tours will be conducted on Saturday June 6 at 5pm and Sunday June 7 at 11.00am. Cost: $15 per person. All funds raised will go towards the Dunkeld Community Hall Redevelopment.
