Autumn has been a challenging time for the ever-busy kitchen team who have fulfilled a long list of outside commitments requiring chefs to travel locally, interstate and internationally for a number of dinners, workshops and food festivals.

Most recently Dan Hunter, together with Joel Alderson and Daniel Dobra, spent five days in Singapore as guests of the 2009 World Gourmet Summit. The chefs presented four sold-out dinners at the internationally acclaimed Iggy's Restaurant in addition to Dan Hunter's Culinary Workshop. Attendees of the workshop were taken through a demonstration of a three course menu consisting of: Heirloom tomato, basil, aged muscatel; Snapper, asparagus, hazelnut, lime and finishing with one of Dan's most popular desserts, Burnt Orange Cream, pineapple, macadamia.

The culinary workshop culminated in a sit down lunch of the dishes demonstrated and was an opportunity for Dan to introduce Singapore to Dunkeld and the Royal Mail Restaurant, which he did with the help of this short video, which was put together for this purpose in February this year. Royal Mail Chef Chris Mason is
Sofitel’s 2009 Apprentice of
the Year. Congratulations go to newly qualified chef, Chris Mason who was last month awarded Sofitel's "Apprentice of the Year". Chris' award grants him a trip to the United Kingdom in 2010 for a two month period of work experience with Michelin- starred chefs Philip Howard at The Square and Michel Roux at Le Gavroch, with Chris also hoping to pop into The Fat Duck to spend a few weeks with Heston Blumenthal and his team.
